Tutti-frutti, a colourful combination of cut and candied fruit, is used in cake decorations and ice cream. In India Tutti Frutti is made from raw papaya. Here is a step-by-step instruction on how to make tutti-frutti at home.
Raw Materials
- Raw Papaya: I got this from my neighbour’s garden. Its weight was about 750 grams. After cutting and peeling, I got about 500 grams of papaya cubes.
- Vanilla essence: Adding a few drops of it will enhance its taste.
- various food colours
- Sugar 500 grams of, which is equal to the weight of papaya cubes
Equipment
- Knife to cut papaya
- Papaya Peeler
- Strainer
- A tablespoon
- About six (equal to the number of colours) metal or glass Containers
- A large pot with a lid for blanching the papaya cubes
Prepare Papaya
- Before peeling and cutting the papaya, we need to extract the milky juice from the fruit.
- Place the raw papaya on a metal plate and make thin slits along the edges as shown.
- As soon as the incisions are made, the juice will start coming out of them.
- Let it remain on the plate till the juice stops oozing from the cut.

Peel and Cut
- Peel off the outer skin using a vegetable peeler or a sharp knife.
- cut the papaya with a knife
- Remove the seeds and inner tissue with a knife
- Wash the slices under running water to remove any juices sticking to the surface
Make Cubes
- Cut the papaya slices into about a quarter-inch cubes
Blanch the Cubes
- Take enough water in a large vessel and bring it to a boil
- When the water starts boiling, put the papaya pieces in the water.
- continue to boil for about two to three minutes
- Switch off the gas and cover the vessel with a lid
- Keep the papaya cubes in hot water for five minutes with the lid closed
- Drain the water and store the blanched cubes separately
Candy with Sugar Syrup
- Boil about half a litre of water in a large pot. You can use the same wash that was used for blanching
- Put 500 grams of sugar in the water. heat till all the sugar dissolves
- Put the boiled papaya cubes in the syrup
- Keep the flame on till the papaya cubes become soft and sweet. You can take out samples at intervals to check this
- When the papaya cubes are satisfactorily candied, switch off the flame.
- Add two to three drops of vanilla essence or any flavouring agent of your choice
Colouring Papaya Cubes
- Add a pinch of different food colouring to six containers
- With the help of a ladle put an equal amount of papaya cubes with sugar syrup in each container
- Mix each container separately well using a large spoon. Wash and dry the spoons in different colours before use
- Leave this mixture like this for about 10 to 12 hours.
Filter and dry the cubes
- After about 12 hours, strain out the coloured cubes from each container individually
- Spread the cubes on a piece of cloth. Here I have also used a layer of newspaper under the cloth so that the cloth and paper cubes can absorb the moisture.
- Keep the cubes under the fan to dry.
- Once the cubes are no longer so sticky to the touch, you can transfer each colour to separate plates and allow them to dry completely without adding any moisture.
- Leftover sugar syrup can be reused for other projects
Our Tutti-Fruity Is Ready
When the cubes are completely dry and not sticky to the touch, our tutti frutti is ready. Tap random cubes with your fingers. The cubes may be soft but no liquid should ooze from the cube. Fill tutti frutti in a clean glass bottle and keep it in the fridge. These colourful candied fruits can be used as a topping for cakes, bread, cookies, buns and ice cream.
